"An oil so precious as to be considered "the yellow gold" of this valley; the little bottle of oil was kept hidden in the house and used to be sipped sometimes..."

Con queste parole esordisce la Signora Marilena Bertolin che ad Arnad, in Valle d'Aosta, produce ancora e con fatica, questo particolarissimo olio ricavato dalla lavorazione e spremitura a freddo delle noci.


With these words Ms. Marilena Bertolin begins to explain to me the history of the walnut oil; we are in Arnad, in the Aosta Valley, where Ms Marilena still and with difficulty produces this very special oil obtained from the processing and cold pressing of walnuts.


"In alta montagna non è mai stato facile reperire l'olio di oliva, per questo le famiglie erano abituate ad avere quantità minime di olio di noci, anche perchè è un frutto che non ha molta resa, conservandolo e usandolo molto poco solamente in occasione di importanti eventi"


"In the high mountains it was never easy to find olive oil, which is why families were used to having minimal amounts of walnut oil, also because it is a fruit that does not yield much oil, and the families always used it very little and only in occasion of important events"


"A volte si usava addirittura inserirlo nel corredo di una sposa e questo accadeva a testimonianza di quanto fosse pregiato e raro"


"Sometimes it was even used to insert it in the bride's trousseau and this happened as a testimony of how precious and rare it was"

La signora Bertolin mi spiega che l'olio di noci è un ottimo alleato della salute "E' ricco di acidi grassi Omega 3 e Omega 6 e dI preziosi sali minerali tra cui potassio e calcio oltre alle vitamine E e C in buona quantità"


Mrs. Bertolin explains to me that walnut oil is an excellent health ally "It is rich in Omega 3 and Omega 6 fatty acids and some precious mineral salts including potassium and calcium in addition to vitamins E and C in good quantities"

Una curiosità... "Il residuo della spremitura dell'olio di noci viene frantumato e si spolvera sulla pasta, sulle zuppe o sui dolci e regala ai piatti un fantastico gusto dolciastro e chiaramente di noce"


Mrs. Marisa explains to me a curiosity "we use the residue of the pressing of walnut oil as seasoning for the soups or for the desserts and gives to the dishes a fantastic sweet taste and clearly of walnut.
