(Ita-Eng) La rosa dei radicchi / The rose of chicories



"E' una coltura che in passato ha rappresentato una delle poche fonti di reddito per gli agricoltori di questo lembo di terra che unisce Gorizia a Salcano centro abitato sloveno appartenente all'aera urbana di Nuova Gorica sulle sponde dell'Isonzo; in inverno era difficile lavorare la terra, la Rosa di Gorizia resisteva e portava entrate economiche ai contadini" Carlo Brumat e suo figlio, sono i produttori dai quali mi trovo a Gorizia; Carlo si ricorda perfettamente quanto fosse importante per suo nonno e poi suo padre questa particolare coltura che viene lentamente trasformata raccogliendola e ripiantandola nella terra in un luogo coperto per farla maturare favorendone la meravigliosa trasformazione... E aggiunge sorridendo "E' come se da bruco si traformasse in crisalide..."

Carlo mi spiega che questo tipo di radicchio è molto resistente quindi poteva essere piantato anche in terreni meno importanti e soprattutto grazie alle sue profonde e robuste radici riesce a difendersi anche in caso di mancanza di acqua nel periodo estivo.

Il figlio di Carlo mi racconta anche che la parte rossa a forma di rosa è quella interna e che a novembre per proteggere i radicchi dal freddo si raccolgono, si puliscono e si interrano in file all'interno di una zona coperta più calda.
